Shloppy Joes
Let’s talk about messy, but delicious dinners.

These “Shloppy Joes” are super easy to make, vegetarian (and vegan friendly!), AND leave you stuffed. Somehow, they actually taste like real sloppy joes. If you're craving some serious comfort food that's like a burger but, you know, a little better for ya, these are your new go-to.
Here are the ingredients you need
EVOO
2 onions, diced
6-8 garlic cloves, diced
1 big head of cauliflower, broken into florets
2 tsp smoked paprika
¼ tsp chili powder
1 tbsp Cajun seasoning
21oz of passata (or crushed tomatoes)
2 tbsp Worcestershire sauce
2 tbsp brown sugar
Pack of coleslaw (either make your own with shredded cabbage and shredded carrots, toss with apple cider vinegar OR buy pre-packaged - no judgement here)
Salad leaves
Mayo
And the instructions…important
Heat a little olive oil in a large pan over medium heat. Add the diced onions and fry for 7 minutes, stirring occasionally.
Add the diced garlic and fry for another 3 minutes, stirring now and then.
While the onions and garlic are doing their thing, prep the cauliflower. Break the florets into smaller pieces with your hands and pulse them in a food processor until they're finely chopped (but not mush). You want them to be evenly sized, so slice any tough stalks into small pieces with a knife.
Add the cauliflower to the pan, along with the chili powder, cajun, and smoked paprika. Stir it all up and let it fry for 10 minutes, stirring occasionally.
Pour in the passata (or crushed tomatoes), Worcestershire sauce, and brown sugar. Stir everything together and let it simmer on low for 20-25 minutes, stirring every now and then. You want the mixture to be "sloppy" but thick enough to stay in the buns.
Toast the buns.
Build it — Mayo dem buns, add salad leaves, spoon on the shloppy mix to your hearts content, add the coleslaw.
Grab a fork, trust me — you’ll need it for the mess. Enjoy!
